Preparation
1. Prepare the ingredientsTake the patties out of the refrigerator only when you are ready to start cooking. Divide the cheddar slices into two 20 g portions and prepare the bacon, gently separating the slices. Take 30 g of the previously prepared Low Carb Crispy Sauce and keep it in the refrigerator until it is time to assemble the buns. Cut the OVER Low Carb Hamburger Buns in half, using a serrated knife to achieve an even cut without squashing the crumb. 2. Prepare the crispy baconHeat a non-stick pan over medium heat without adding oil. Arrange the bacon slices on the hot surface, avoiding overlapping them. Cook for approximately 5-6 minutes in total, turning them several times, until the fat begins to melt and the surface becomes golden and crispy. The bacon should be well browned, but not burnt. Transfer the slices to a sheet of absorbent paper and set them aside. As they cool, they will become slightly crispier. 3. Cook the beef pattiesHeat a griddle or non-stick pan over medium-high heat. Place the patties on the hot surface and let them brown for approximately 4-5 minutes per side, adjusting the time according to their thickness. Avoid continuously pressing the meat with a spatula: this would cause the juices to escape, making the hamburger less tender. For safe cooking of ground meat, use a kitchen thermometer to check that it reaches at least 71 °C at the core. Add a grind of black pepper. There is no need to add more salt, as the bacon, cheddar, and Crispy Sauce already provide a significant amount of saltiness. 4. Add the cheddarWhen the patties are almost cooked, place a slice of cheddar weighing approximately 20 g on top of each. Reduce the heat slightly and cover the pan for approximately 30-60 seconds, allowing the cheese to soften and begin to melt on the surface of the meat. The cheddar should envelop the patty, forming a creamy layer without separating excessively. |

5. Toast the OVER Low Carb Hamburger Buns
Heat a clean pan or griddle over medium-low heat.
Place the two halves of the OVER Low Carb Hamburger Buns with the cut surface facing down.
Let them toast for approximately 1-2 minutes, until they are lightly browned on the inside.
This step enhances the aroma of the bread and creates a surface that is more resistant to the moisture of the sauce.
Avoid toasting for too long: the bun should remain soft and pleasant to bite into.
6. Spread the Crispy Sauce
Place the bottom halves of the buns on a cutting board or two serving plates.
Spread approximately 7-8 g of Low Carb Crispy Sauce on the bottom of each bun.
Spread the remaining sauce on the inner surface of the two top halves.
The Crispy Sauce, prepared with pasteurized egg yolks, peanut oil, mustard, tomato paste, capers, and gherkins, gives the hamburger a creamy, tangy, and slightly spicy note.
7. Assemble the hamburgers
Place a beef patty with melted cheddar on the base of each bun.
Distribute the crispy bacon slices over the meat, trying to keep them slightly overlapping to create an even layer.
Close with the top half of the bun, already seasoned with the Crispy Sauce.
Press very gently to compact the bun, without squashing the meat or excessively compressing the crumb.
8. Serve immediately
Bring the freshly assembled hamburgers to the table when the cheddar is still soft, the bacon retains its crispiness, and the bun is slightly warm.
For a tidier presentation, you can secure the bun with a long hamburger skewer.
Serve without adding any additional sauces: the Crispy Sauce is already rich and flavorful enough to complete the preparation.
Serving tip
To achieve a particularly delicious hamburger, choose a beef patty with a fat content around 15%. Excessively lean meat may end up dry after cooking, while a small amount of fat helps maintain tenderness and juiciness.
The bacon should be thin and well browned, creating a sharp contrast with the melted cheddar and the soft texture of the bun.
For this recipe, it is preferable to use real cheddar cheese, rather than processed cheese slices that may contain starches or other high-carbohydrate ingredients.
The amount of Crispy Sauce should remain around 15 g per hamburger: it is enough to characterize the flavor without overpowering the taste of the meat and bacon.
Storage: the assembled hamburger should be consumed as soon as it is prepared. The Crispy Sauce must be stored separately in the refrigerator, following the instructions in its recipe.
Why it works
This hamburger allows you to recreate the culinary experience of a classic cheeseburger with bacon while maintaining an extremely low carbohydrate content.
The OVER Low Carb Hamburger Bun provides only 2.69 g of carbohydrates per 80 g bun, thanks to a formulation based on resistant starch, inulin, fiber, and wheat proteins.
The beef patty is the main protein component of the filling, while the cheddar and bacon add saltiness, tenderness, and crispiness.
The Homemade Low Carb Crispy Sauce, with only 2.7 g of carbohydrates per 100 g, completes the recipe with a creamy texture and a bold flavor, without requiring the addition of ketchup or other sugary sauces.
The result is a rich and satisfying hamburger with a much lower carbohydrate content than a hamburger made with traditional bread.

The nutritional values are estimated based on the quantities indicated, using the official nutritional sheet of the OVER Low Carb Hamburger Bun, the previously calculated values of the Low Carb Crispy Sauce, the CREA tables, and reference data for ground beef.
The calculation considers a beef patty with approximately 15% fat, traditional cheddar, and bacon made from pork belly.
An estimated final weight of approximately 210 g per hamburger was assumed after cooking the meat and bacon. The calculation prudently retains the nutrients of the raw ingredients, without subtracting the fat that may be lost during browning.
The actual values may therefore vary depending on the composition of the meat, the bacon used, the amount of fat removed during cooking, and the final weight of the bun.
