Low Carb Crispy Sauce Recipe
🌯 A creamy, intense, and flavorful sauce, perfect for accompanying hamburgers, low-carb sandwiches, or grilled meats. No added sugar and naturally low in carbohydrates.
🧅 Ingredients
- Egg yolks: 3
- Peanut oil: 150 g
- Mustard: 50 g
- Tomato paste: 30 g
- Pickles: 3 (approx. 30 g)
- Desalted capers: 20 g
- Garlic powder: 1 teaspoon
- Salt: 1 teaspoon
- Meat extract: 5 g
- Apple cider vinegar: 10 g (approx. 1 tablespoon)
⚖️ Preparation
🌿 1. Prepare the ingredients
- If the capers are not already desalted, rinse them thoroughly under running water to remove excess salt and dry them with kitchen paper.
- Finely chop the pickles with a sharp knife to achieve a homogeneous consistency.
🍽 2. Combine the ingredients
- In a large bowl or blender cup, add the egg yolks, mustard, tomato paste, pickles, capers, garlic powder, salt, meat extract, and apple cider vinegar.
🌐 3. Blend and emulsify
- Use an immersion blender (or traditional blender) and start blending at a low speed.
- Pour the oil in a thin stream very slowly while continuing to blend, to promote emulsification and achieve a smooth and creamy consistency.
🫕 4. Make the sauce fluffy
- Continue blending until you get a thick, stable, and homogeneous cream.
🌽 5. Taste and adjust
- Taste the sauce: if you want a bolder flavor, you can add a pinch of salt or a few extra drops of apple cider vinegar.
