How to prepare Tom Kha-style Low Carb Tempestine

1. Prepare the aromatics

Lightly crush the lemongrass stalk. Slice the galangal thinly. Score the chili pepper and dose according to desired spiciness. Kaffir lime leaves should be left whole: they are used to flavor the broth, not to be eaten.

 

2. Prepare the mushrooms

Clean the king oyster or oyster mushrooms and slice them not too thinly. They should remain discernible in the soup and provide texture. Avoid canned, marinated, or unconventionally prepared mushrooms.

 

3. Flavor the broth

Pour the light broth into a saucepan. Add lemongrass, galangal, kaffir lime leaves, and chili pepper. Let it simmer for 5 minutes for the aromatics to release their fragrance.

 

4. Add the mushrooms

Add the mushrooms to the aromatic broth and cook for 4-5 minutes. They should soften but not fall apart.

5. Add the coconut milk

Add the unsweetened coconut milk. Stir and keep the heat low. The soup should remain creamy but not heavy.

6. Cook the Tempestine

Add the Low Carb Tempestine and cook for 8 minutes, stirring gently. If the soup thickens too much, add a little hot water.

7. Add the shrimp

Add the shrimp in the last 2-3 minutes. They should cook briefly and remain tender.

8. Finish

Turn off the heat. Add sugar-free fish sauce and Thai basil. Adjust salt only if necessary. Remove lemongrass, galangal, and kaffir lime leaves before serving, or advise that they are aromatic elements not meant for consumption.
